Pan Grilled Chicken with Orange, Mustard, and Honey Sauce
There are several recipes on the internet for orange chicken or chicken with orange sauce, but after scrutinizing some, I found this combination works perfect. However, the outcome depends on the type of orange you use. I used a large one that had ripened to the perfect sweet and sourness. I usually keep large oranges in the refrigerator for 15 days if they are too tight and possibly sour. The ripened one is best.
Marinade for Orange Chicken
2 small chicken breasts, flattened
¾ ginger garlic paste
½ tsp mixed herbs
1 tablespoon Worcester sauce Lea Perrins brand
1 tablespoon honey
1 tablespoon freshly ground black pepper
Marinade the chicken in the ingredients making sure to spread the honey well on the chicken. Keep aside for 15 minutes.
Add butter to a grill pan, and get a nice sear on the chicken on both sides, then cook on low flame till chicken is cooked. Chicken breast does not need to be cooked too long or it will get dry and stringy. 5 4 to 5 min on each side is enough. Then a further 5 to 8 min on low flame if the breast is a bit thicker.
Sauce
½ cup finely chopped onion
2 tbls chopped garlic
1 tsp ginger garlic paste
½ cup ripe fresh orange juice
1 tsp freshly ground black pepper
Chopped coriander
1 tablespoon honey
1tsp paprika powder
¼ tsp turmeric
½ tsp mixed herbs
½ tsp dark soy
Chicken stock
Method
Add some oil or butter to a pan, add the chopped onions and garlic. Cook till onions get abit caramelized and brown. Then add the ginger garlic paste. Now add the orange juice, the black pepper, turmeric, honey, paprika, soy and stir. Add the coriander, and chicken stock. Stir till a little thick, add salt and its done.
For the Veggies
This part is completely flexible. I used long beans, carrots and peas braised in butter, and herbs with a dash of Worcestershire Sauce. You can even add a potato mash. Enjoy your orange chicken.
