Grilled Honey Glazed Chicken with Mustard, Onion and Cream sauce
Serves two
Ingredients for the grilled chicken marinade
2 medium size chicken breasts
1 Tsp ginger garlic paste
1 Tsp mixed herbs
½ tsp crushed pepper
Salt
1 tsp Worcester sauce
1 ½ tsp honey
Marinate the chicken breasts with the above ingredients keeping the honey for last. Do not rub honey in, but just smear it on the chicken. Let it rest for 10 min. Now in a grill pan, grill the chicken in some oil or butter (preferably) till you get a nice sear on both sides. Do not overcook. 5 min each side should be enough. Then cook for another 3-5 min on low flame.
For The Sauce
1 tsp ginger garlic paste
1 tblsp butter
1 ½ tblsp flour (make a smooth paste with water)
1 cup finely chopped onions
1 tblsp English mustard
1 tbslp milk cream
½ tsp paprika powder
1 tblsp Worcester sauce
Chicken stock
Salt, pepper
In the same pan as you cooked the chicken, add butter, add the onions and cook till slightly brown. Now add the flour paste. Stir and mix well, add chicken stock enough for two persons. Add the mustard, cream, paprika powder, salt and pepper. Add 1 tablespoon Worcester sauce, let simmer on low flame till a nice consistency and remove. Do not allow to get too thick. Set aside.
Veggies and Mash
Boil potatoes as per discretion. Mash potato with mayonnaise, add salt and pepper, mixed herbs and serve with grated smoked cottage cheese (called Bandel cheese in Kolkata).
For the veggies, just choose veggies of your choice, grill or slow cook in some butter or oil. Add salt, pepper and Worcester sauce. Cook the veggies preferably in the same pan as the sauce. Add mixed herbs, or oregano if desired. Your grilled honey glazed chicken in mustard cream sauce is done.
